It's fiesta time! Serve these chicken lettuce wraps tossed in a homemade cilantro-lime dressing.

1(15-oz.) can Hy-Vee no-salt-added black beans, rinsed and drained
1 c.Hy-Vee frozen sweet corn, thawed
20cherry tomatoes, quartered
1 c.Hy-Vee rotisserie chicken, shredded
½ tsp.Hy-Vee ground cumin
½ tsp.Hy-Vee chili powder
1 head(s)leaf lettuce, such as butterhead or iceberg, rinsed and separated
1avocado, seeded, peeled, and chopped
Fresh cilantro, chopped, for garnish
Dressing
2 tbsp.Gustare Vita olive oil
1lime, juiced
2 tbsp.fresh cilantro, chopped
¼ tsp.Hy-Vee salt
¼ tsp.Hy-Vee ground black pepper

Directions

  1. In a medium bowl, combine black beans, corn, tomatoes, shredded chicken, and seasonings. 

  2. In a small bowl, whisk together olive oil, lime juice, cilantro, and salt and pepper to make the dressing. Pour dressing over bean mixture, and toss to combine.

  3. Spoon 1/2 cup of the mixture onto each lettuce leaf and garnish with diced avocado and additional cilantro, if desired.
