¾ c. chopped red bell pepper
1 (10 oz) bag frozen super sweet corn
¼ tsp. Hy-Vee salt
½ tsp. chili powder
¼ c. chopped scallions

Directions

  1. In a large skillet, heat oil over medium-high heat. Add red pepper and sauté until tender. Add frozen corn and cook for two minutes. Stir in salt and chili powder. Top with chopped scallions before serving.
