Fast Fiesta Soup
Servings and Ingredients
|2 (14.5 oz each) cans Hy-Vee diced tomatoes with green chilies|
|1 (16 oz) pkg Hy-Vee frozen mixed vegetables|
|1 (15 oz) can Hy-Vee black beans, rinsed and drained|
|1 (14.5 oz) can Hy-Vee reduced-sodium chicken broth|
|1 tbsp. Old Bay seasoning|
|1 ½ tsp. ground cumin|
|1 tsp. Hy-Vee chili powder|
|Hy-Vee sour cream, Hy-Vee shredded cheddar cheese and Hy-Vee tortilla chips, optional|
- In a large stockpot, combine diced tomatoes with green chilies, vegetables, black beans, chicken broth and seasonings. Cook over medium heat until heated through.
- Serve topped with sour cream, cheese and chips, if desired.
