    1 tbsp.Hy-Vee unsalted butter
    1 tbsp.Hy-Vee Select extra-virgin olive oil
    1small Vidalia onion, thinly sliced
    1red pepper, cored, seeded and thinly sliced
    1green pepper, cored, seeded and thinly sliced
    1(16 oz) loaf Bakery Italian bread, halved lengthwise
    1(7 oz) pkg Hy-Vee deli thin slices roast beef
    1 c.shredded Hy-Vee Colby Jack cheese

    Directions

    1. Heat butter and oil in skillet on medium-high heat. Add onion and peppers. Sauté 12 minutes or until vegetables are tender. Remove from heat and set aside.
    2. Preheat oven to 325 degrees.
    3. Lay bread open-faced on baking sheet. Place roast beef slices on bottom of loaf. On top of loaf, evenly distribute sautéed vegetables and shredded cheese. Bake 8 to 10 minutes or until warmed through and cheese is melted.
    4. Remove baking sheet from oven. Allow to cool 2 minutes. Place bottom half of bread on top half; hold together while flipping upright to prevent vegetables from sliding off bread. Slice to serve.
