    1 tbsp. Hy-Vee unsalted butter
    1 tbsp. Hy-Vee Select extra-virgin olive oil
    1 small Vidalia onion, thinly sliced
    1 red pepper, cored, seeded and thinly sliced
    1 green pepper, cored, seeded and thinly sliced
    1 (16 oz) loaf Bakery Italian bread, halved lengthwise
    1 (7 oz) pkg Hy-Vee deli thin slices roast beef
    1 c. shredded Hy-Vee Colby Jack cheese

    Directions

    1. Heat butter and oil in skillet on medium-high heat. Add onion and peppers. Sauté 12 minutes or until vegetables are tender. Remove from heat and set aside.
    2. Preheat oven to 325 degrees.
    3. Lay bread open-faced on baking sheet. Place roast beef slices on bottom of loaf. On top of loaf, evenly distribute sautéed vegetables and shredded cheese. Bake 8 to 10 minutes or until warmed through and cheese is melted.
    4. Remove baking sheet from oven. Allow to cool 2 minutes. Place bottom half of bread on top half; hold together while flipping upright to prevent vegetables from sliding off bread. Slice to serve.
