|1 c.||vegetable shortening|
|1 c.||Hy-Vee granulated sugar|
|1 c.||packed Hy-Vee brown sugar|
|2||Hy-Vee large eggs|
|1 tsp.||Hy-Vee vanilla extract|
|1 ½ c.||Hy-Vee flour|
|1 tsp.||Hy-Vee baking soda|
|1 tsp.||Hy-Vee salt|
|3 c.||That's Smart quick oats|
|1 c.||chopped Hy-Vee walnuts, optional|
|1 c.||Hy-Vee raisins, optional|

- Cookie sheets
- Large bowl
- Electric mixer
- Medium bowl
- Rounded tablespoon
- Cooling racks
Beat shortening and sugars until creamy. Beat in eggs and vanilla.
Combine flour, baking soda and salt. Stir into shortening mixture. Stir in oats, nuts and raisins.
Using rounded tablespoons, roll into balls. Place 2 inches apart on prepared baking sheets.
Bake 12 minutes or until lightly browned. Let stand 1 minute before removing to racks to cool.
