2 tbsp. fresh lime juice (approximately the juice of 1 lime)
1 tbsp. canola oil
1 tbsp. minced shallot
2 tsp. rice vinegar
1 tsp. honey
cayenne pepper or to taste
4 kiwis, peeled and diced
2 firm, ripe bananas, peeled and cut diagonally into 1/2-inch-thick slices
¼ c. dried Goji berries
2 tbsp. thinly sliced fresh mint
2 tbsp. slivered almonds, toasted (see *Tip)

Directions

  1. Whisk lime juice, oil, shallot, vinegar, honey and cayenne in a medium bowl.
  2. Add kiwis, bananas, Goji berries and mint; toss to coat.
  3. Serve sprinkled with slivered almonds.
  4. *Tip: To toast almonds on the stovetop: Toast in a small, dry skillet over medium-low heat, stirring constantly, until fragrant and lightly browned, 3 to 5 minutes.
