Eggless Egg Salad
Servings and Ingredients
|8 oz. firm tofu, crumbled and drained well|
|1 ½ tbsp. Hy-Vee mustard|
|1 tsp. sugar|
|¼ c. minced celery|
|1 tsp. minced green onion tops|
|2 tsp. Hy-Vee sweet pickle relish, drained|
|3 tbsp. Hy-Vee mayonnaise or salad dressing|
|salt and pepper, to taste|
- Combine tofu, mustard, sugar, celery, onion tops, pickle relish, mayonnaise, salt and pepper in a medium mixing bowl. Mix well.
- Chill for several hours to allow flavors to blend.
