    3 tbsp. Hy-Vee Select olive oil
    Juice of 2 lemons
    2 tbsp. grated fresh ginger
    2 jalapenos, seeded and chopped
    4 cloves garlic, minced
    1 tsp. Hy-Vee sea salt
    1 ½ lbs. salmon fillets, cut into fourths

    Directions

    1. In a bowl combine olive oil, lemon juice, ginger, jalapeno, garlic and salt.
    2. Place salmon fillets in a shallow dish and pour ginger mixture over them. Cover and let marinate in the refrigerator for at least 30 minutes.
    3. Preheat oven to 350°F. Line a baking sheet with foil and spray with non-stick cooking spray.
    4. Place salmon fillets onto prepared baking sheet, skin side down, and drizzle some of the marinade over them. Cover with foil and bake for 15 minutes. Turn on broiler, remove foil, and broil for further 3 minutes or until the top is golden brown.
