1 ½ c. Hy-Vee light salad dressing
1 tbsp. Hy-Vee yellow mustard
¼ c. chopped green onion
3 lbs. Hy-Vee russet potatoes, peeled, cubed and cooked
6 Hy-Vee large eggs, hard-cooked, peeled, chopped
Paprika, optional

Directions

  1. In a large bowl, stir salad dressing, mustard and green onion until blended.
  2. Gently stir in potatoes and eggs. Cover and refrigerate 3 to 4 hours or until chilled.
  3. Sprinkle with paprika before serving, if desired.
