    1 c. Hy-Vee buttermilk complete pancake & waffle mix
    ⅔ c. water
    1 (1.3-lb.) pkg. Hy-Vee Short Cuts pineapple chunks
    3 tbsp. maraschino cherry juice
    1 tbsp. Hy-Vee corn starch
    Hy-Vee powdered sugar, for sprinkling
    Hy-Vee maraschino cherries, for garnish

    Things To Grab

    • Deep-fat fryer or heavy 6-qt. saucepan
    • Medium bowl
    • Wooden skewers
    • Small saucepan

    Directions

    1. Heat oil in deep-fat fryer or heavy 6-quart saucepan to 350 degrees. Combine pancake mix and water in medium bowl. 

    2. Thread pineapple on wooden skewer; dip pineapple chunks into pancake batter, turning to coat completely. Fry skewers in batches 1 to 2 minutes per side. Remove from oil, let cool. 

    3. Mix together cherry juice and corn starch in small saucepan. Cook over medium-low heat, whisking continuously until thick enough to coat the back of a spoon. 

    4. Sprinkled fried pineapple with powdered sugar and drizzle with cherry sauce. Garnish with maraschino cherries, if desired.
