|1 c. Hy-Vee buttermilk complete pancake & waffle mix|
|⅔ c. water|
|1 (1.3-lb.) pkg. Hy-Vee Short Cuts pineapple chunks|
|3 tbsp. maraschino cherry juice|
|1 tbsp. Hy-Vee corn starch|
|Hy-Vee powdered sugar, for sprinkling|
|Hy-Vee maraschino cherries, for garnish|

- Deep-fat fryer or heavy 6-qt. saucepan
- Medium bowl
- Wooden skewers
- Small saucepan
Thread pineapple on wooden skewer; dip pineapple chunks into pancake batter, turning to coat completely. Fry skewers in batches 1 to 2 minutes per side. Remove from oil, let cool.
Mix together cherry juice and corn starch in small saucepan. Cook over medium-low heat, whisking continuously until thick enough to coat the back of a spoon.
Sprinkled fried pineapple with powdered sugar and drizzle with cherry sauce. Garnish with maraschino cherries, if desired.
