Line a baking sheet with parchment paper. Stir 1/4 cup cashews into melted chocolate; spread onto prepared baking sheet 1/2-inch-thick. Sprinkle remaining 1/4 cup cashews, pepitas, and sunflower nuts, and whole flaxseeds on top. Let stand 30 minutes. Remove parchment; break into pieces.
