3 tbsp. Hy-Vee Select olive oil
5 clove(s) garlic, peeled and thinly sliced
3 c. chopped plum tomatoes
1 ½ c. Hy-Vee tomato juice
¼ tsp. Hy-Vee salt
¼ tsp. Hy-Vee black pepper
1 (12 oz) package Hy-Vee curly spaghetti, uncooked
8 c. fresh spinach, thinly sliced
1 c. crumbled feta cheese

Directions

  1. Heat oil in a large skillet over medium heat. Add garlic and cook until golden brown.
  2. Remove garlic with a slotted spoon and let it cool.
  3. Add tomatoes, tomato juice, salt and pepper to the oil. Heat to boiling.
  4. Finely chop cooled garlic and add to sauce. Reduce heat and simmer 10 minutes.
  5. Meanwhile, cook pasta according to package directions. Drain.
  6. Add spinach to tomato mixture. Cover and steam 3 minutes or until wilted.
  7. Stir in feta cheese. Toss together hot pasta and sauce.
  8. Serve immediately.
