    1 (3 lb) pork tenderloin roast
    1 large clove garlic, cut into thin slivers
    2 tbsp. packed Hy-Vee brown sugar
    1 ½ tsp. curry powder
    1 tsp. cumin
    Hy-Vee salt and Hy-Vee pepper, to taste
    1 large onion, cut into wedges
    ⅓ c. water

    Directions

    1. Preheat oven to 375 degrees.
    2. Cut several slits in pork roast; insert garlic slivers. In small bowl, blend brown sugar, curry powder, cumin, salt and pepper. Rub mixture evenly over pork roast.
    3. Place pork in shallow roasting pan. Place onion wedges around roast. Add water to pan. Roast 1 hour 15 minutes to 1 hour 30 minutes or until internal temperature is at least 145 degrees. Cover and let stand 5 to 10 minutes before serving. Refrigerate leftovers.
