Cucumber Mint Lemonade (Get Cooking)
Servings and Ingredients
|¾ c.||sugar, plus additional for sweetening|
|1 c.||packed mint leaves|
|6||cucumbers, peeled and roughly chopped|
|1 c.||fresh lemon juice, from 5 to 6 lemons|
- To make mint simple syrup, bring water and sugar to a boil in a small saucepan. Reduce heat, and simmer for 5 minutes or until sugar dissolves. Remove from heat and stir in the mint. Refrigerate for 1 hour. Strain through a sieve over a bowl, and discard mint.
- Blend cucumber in a blender until smooth.
- Combine cucumber puree, mint simple syrup and lemon juice in a pitcher over ice; chill. Adjust sweetness to taste.
- Garnish with fresh cucumber slices and mint sprigs before serving.
