    1 c. water
    ¾ c. sugar, plus additional for sweetening
    1 c. packed mint leaves
    6 cucumbers, peeled and roughly chopped
    1 c. fresh lemon juice, from 5 to 6 lemons

    Directions

    1. To make mint simple syrup, bring water and sugar to a boil in a small saucepan. Reduce heat, and simmer for 5 minutes or until sugar dissolves. Remove from heat and stir in the mint. Refrigerate for 1 hour. Strain through a sieve over a bowl, and discard mint.
    2. Blend cucumber in a blender until smooth.
    3. Combine cucumber puree, mint simple syrup and lemon juice in a pitcher over ice; chill. Adjust sweetness to taste.
    4. Garnish with fresh cucumber slices and mint sprigs before serving.
