Preheat oven to 400 degrees. Line a baking sheet with foil and top with a cooling rack. Spray generously with non-stick cooking spray.
In a medium bowl, whisk eggs with remaining ½ cup buttermilk. Place baking mix in a separate bowl. Place crushed cereal in a third bowl.
Remove chicken from buttermilk, one piece at a time, and dredge in baking mix. Dip in egg mixture and roll in cereal, coating chicken tenders completely. Place on prepared rack. Spray with cooking spray.
