    1 lbs. Hy-Vee boneless skinless chicken breast tenders
    1 ½ c. low-fat buttermilk, divided
    2 c. Hy-Vee all-purpose baking mix
    4 c. Hy-Vee Oats and More with Honey cereal, crushed to about 2 1/2 c.
    2 Hy-Vee large eggs, beaten

    • Large baking sheet
    • Aluminum foil
    • Hy-Vee nonstick cooking spray
    • Medium bowl
    • Meat thermometer

    Directions

    1. Place chicken in large resealable plastic bag. Pour 1 cup buttermilk over chicken; seal and refrigerate 1 hour.

    2. Preheat oven to 400 degrees. Line a baking sheet with foil and top with a cooling rack. Spray generously with non-stick cooking spray.

    3. In a medium bowl, whisk eggs with remaining ½ cup buttermilk. Place baking mix in a separate bowl. Place crushed cereal in a third bowl.

    4. Remove chicken from buttermilk, one piece at a time, and dredge in baking mix. Dip in egg mixture and roll in cereal, coating chicken tenders completely. Place on prepared rack. Spray with cooking spray. 

    5. Bake 20 to 30 minutes or until internal temperature of chicken reaches 165 degrees.
