1 medium celery stalk, chopped
¼ c. chopped onion
2 c. chopped spinach leaves
½ jalapeno pepper, seeded, diced
8 c. water
1 (11 oz) pkg Bear Creek creamy potato soup mix

Directions

  1. In a Dutch oven, melt butter over medium heat. Stir in celery, onion, spinach and jalapeno pepper; saute 2 to 3 minutes.
  2. Pour water into Dutch oven and bring to a boil. Whisk in soup mix. Simmer, uncovered, 10 minutes.
