    12 oz.bulk mild Italian sausage
    3 clove(s)garlic, minced
    1 c.red onion, chopped
    1 c.mushrooms, sliced
    ¼ c.sun-dried tomatoes, chopped
    1(10-oz.) pkg fresh spinach, coarsely chopped
    2 tbsp.fresh basil, coarsely chopped
    1lemon, juiced
    1(24-oz.) jar Hy-Vee traditional pasta sauce
    ½ c.Hy-Vee heavy whipping cream
    Hy-Vee salt, to taste
    Hy-Vee freshly ground black pepper, to taste
    ½ c.Hy-Vee shredded Parmesan cheese

    Directions

    1. Prepare mafalda according to package directions. Transfer to a large bowl.

    2. Meanwhile, cook Italian sausage in a large skillet over medium-high heat until no longer pink. Drain well.

    3. Stir in garlic, onion and mushrooms; cook until mushrooms are lightly browned. Add sun-dried tomatoes, spinach, basil and lemon juice. Cook for 1 minute or until spinach has wilted. Add spinach in batches, if necessary.

    4. Stir in pasta sauce and cream. Bring to a boil; reduce heat and simmer for 5 minutes or until sauce starts to thicken. Season to taste with salt and pepper.

    5. Combine pasta and sauce and sprinkle with Parmesan cheese.
