Creamy Spinach and Italian Sausage with Mafalda

Mafalda is a short lasagna-looking Italian noodle. We paired it with a sun-dried tomato and sausage sauce that you're sure to love.

2 tbsp. fresh basil, coarsely chopped | ||
1 lemon, juiced | ||
1 (24-oz.) jar Hy-Vee traditional pasta sauce | ||
½ c. Hy-Vee heavy whipping cream | ||
Hy-Vee salt, to taste | ||
Hy-Vee freshly ground black pepper, to taste | ||
½ c. Hy-Vee shredded Parmesan cheese |

Directions
Meanwhile, cook Italian sausage in a large skillet over medium-high heat until no longer pink. Drain well.
Stir in garlic, onion and mushrooms; cook until mushrooms are lightly browned. Add sun-dried tomatoes, spinach, basil and lemon juice. Cook for 1 minute or until spinach has wilted. Add spinach in batches, if necessary.
Stir in pasta sauce and cream. Bring to a boil; reduce heat and simmer for 5 minutes or until sauce starts to thicken. Season to taste with salt and pepper.
Combine pasta and sauce and sprinkle with Parmesan cheese.
