    Description

    Polenta is cooked cornmeal that can be flavored liked mashed potatoes. Historically it was a staple food in Italy, but today it's served in a variety of cuisines.

    4 c. hot water
    2 c. Hy-Vee half-and-half, warmed
    2 c. stone-ground polenta
    3 tbsp. Hy-Vee butter, melted
    1 (8 oz) pkg Hy-Vee shredded sharp cheddar cheese
    Hy-Vee sea salt and freshly ground Hy-Vee black pepper, optional

    Directions

    1. Stir together water, half-and-half, polenta and butter in a slow cooker. Stir in cheese. Cover and cook on HIGH for 2 hours. Stir very well. Cover and continue cooking until thick, about 30 more minutes. Stir very well and season with salt and pepper, if desired. Serve warm. Polenta will thicken upon standing.
