3 c. uncooked Hy-Vee bow tie pasta
1 tbsp. Hy-Vee Select garlic-flavored olive oil
1 (8 oz) package baby bella mushrooms, sliced
Hy-Vee salt and Hy-Vee pepper, to taste
½ c. vegetable broth
½ tsp. Hy-Vee thyme
½ c. Hy-Vee light sour cream
Hy-Vee shredded Parmesan cheese, optional

Directions

  1. Prepare bow tie pasta according to package directions.
  2. Meanwhile, heat olive oil in large skillet over medium-high heat. Add mushrooms and sauté until lightly browned. Season with salt and pepper.
  3. Stir in broth and thyme; simmer for 1 minute. Turn off the heat and stir in sour cream.
  4. Add cooked bow tie pasta to the pan and toss to combine. Season with additional salt and pepper. Serve with shredded Parmesan cheese, if desired.
