Creamy Italian Pasta Salad
Because everyone loves the twisted noodles. This crowd favorite is a good go-to for an Italian picnic or summery potluck.
Servings and Ingredients
|1 (16 oz) pkg Hy-Vee rotini pasta|
|1 c. Hy-Vee Italian dressing|
|1 c. Hy-Vee mayonnaise|
|1 c. Hy-Vee finely shredded Parmesan cheese|
|1 c. roasted red peppers strips|
|1 (2.25 oz) can Hy-Vee sliced black olives|
|1 (10.5 oz) pkg yellow cherry tomatoes, halved|
|1 (10.5 oz) pkg red cherry tomatoes, halved|
|½ c. chopped fresh basil|
|Hy-Vee salt and Hy-Vee black pepper, to taste|
- Prepare pasta according to package directions. Drain and run under cold water to cool. Set aside in a large mixing bowl.
- In a small bowl, combine Italian dressing, mayonnaise and Parmesan cheese. Mix well, and stir into pasta. Add red peppers, black olives, tomatoes and basil, tossing to coat evenly. Season to taste with salt and pepper. Refrigerate at least one hour before serving.
