    1 c. crema Mexicana (table cream style), plus additional for garnish
    1 ½ tbsp. fresh lime juice
    1 (1-lb.) pkg. Hy-Vee 80% lean ground beef, cooked and drained
    1 (15.5-oz.) can Hy-Vee white hominy, drained and rinsed
    1 (14.5-oz.) can Hy-Vee fire roasted salsa style diced tomatoes, undrained
    2 tbsp. Hy-Vee 25% less sodium taco seasoning mix
    Lime wedges, for garnish
    Microgreens, for garnish
    Hy-Vee Santa Fe style tortilla strips, for garnish

    Directions

    1. Whisk together canned soup, water, crema and lime juice together in a medium saucepan. Cook over medium heat for 2 to 3 minutes or until mixture begins to bubble.

    2. Add ground beef, hominy, tomatoes and taco seasoning mix. Bring to boil; reduce heat to medium-low. Simmer, covered, for 5 to 10 minutes or until heated through. Garnish with additional crema, lime wedges, microgreens and tortilla strips, if desired.
