Cranberry Trail Mix Bars
Servings and Ingredients
|1 c. Hy-Vee quick oats|
|½ c. finely crushed Hy-Vee honey graham crackers (2 whole crackers)|
|1 (2 ounce) package Hy-Vee natural almonds, coarsely chopped|
|¼ c. ground flax seed|
|1 (5 ounce) package Hy-Vee dried cranberries|
|½ c. Hy-Vee honey|
|2 tbsp. packed Hy-Vee brown sugar|
|2 tbsp. Hy-Vee unsalted butter|
|2 tsp. Hy-Vee vanilla|
- Combine oats, graham cracker crumbs and almonds on a large baking sheet. Bake at 350 degrees for 10 minutes, stirring occasionally, until oats and almond are light brown. Stir in flax seed and cranberries.
- Meanwhile, combine honey, brown sugar and butter in a medium saucepan. Cook, stirring constantly, over medium heat until butter is melted. Stir in oatmeal mixture and vanilla. Press firmly into an 8-inch-square baking dish sprayed with non-stick cooking spray.
- Bake at 300 degrees for 25 minutes. Allow bars to cool before removing from pan. Cut into squares and store in an air-tight container for up to a week.
