Cranberry-Orange Brie Cups

Description
Quick to make and easy to eat are the best kinds of appetizers, aren't they? Make the cranberry compote ahead of time, so all you need to do is assemble, bake and serve.

1 (12 oz) bag frozen cranberries | ||
1 orange, zested and juiced | ||
45 mini phyllo shells | ||
8 oz. Brie, cut into 45 cubes | ||
orange zest, for garnish |
Directions
- Combine sugar and water in a saucepan; bring to a boil. Add cranberries; return to boil. Simmer on low 5 to 10 minutes, until cranberries pop and mixture thickens. Remove from heat and stir in orange zest and orange juice. Set aside.
- Place phyllo cups on a baking sheet. Place 1 piece of Brie in each phyllo cup. Cover with foil and bake at 350 degrees for 10 to 5 minutes or until Brie is melted. Remove from oven; top each with 1 to 1-1/2 teaspoon cranberry mixture. Garnish with orange zest, if desired.
