    4 Granny Smith apples, peeled, cored and sliced
    1 (12 oz) pkg fresh cranberries
    1 ¾ c. Hy-Vee granulated sugar, divided
    ⅓ c. instant tapioca
    3 ½ c. crushed Hy-Vee wheat crackers, divided
    ½ c. Hy-Vee butter, melted, divided
    ⅓ c. Hy-Vee English walnut pieces

    Directions

    1. Preheat oven to 375 degrees.
    2. In a large bowl, combine apples, cranberries and 1-1/2 cups sugar. Toss well and set aside for 20 minutes.
    3. Stir in tapioca and let sit another 20 minutes.
    4. Meanwhile, combine 3 cups crushed wheat cracker with 4 tablespoons melted butter. Press into a 9-inch pie plate.
    5. Pour apple mixture into pie crust. Bake uncovered 30 minutes.
    6. Meanwhile in a medium bowl, combine remaining 1/2 cup crushed wheat crackers, 1/4 cup sugar, 4 tablespoons melted butter and walnut pieces. Sprinkle evenly over pie and bake another 20 minutes.
    7. Place on a cooling rack to cool.
