    2 lbs. Hy-Vee One Step russet potatoes
    6 tbsp. Hy-Vee salted butter, melted
    ⅔ c. Hy-Vee whole milk, warmed
    ¾ tsp. Hy-Vee salt
    ¼ tsp. Hy-Vee ground black pepper
    2 (10-oz. each) pkg. frozen broccoli, cauliflower, carrots and cheese sauce
    3 c. Hy-Vee rotisserie chicken
    Hy-Vee lightly salted crispy onions, for garnish

    • Large pot with lid
    • Potato masher
    • 4 serving bowls

    Directions

    1. Place potatoes in a large pot; cover with cold water. Bring to boiling over high heat; reduce heat to medium-low. Cook 25 to 30 minutes or until tender; drain. Add butter; mash potatoes. Add milk, salt, and pepper; continue mashing until smooth. 

    2. Meanwhile, microwave frozen vegetables according to package directions. Combine with shredded and warmed rotisserie chicken.

    3. Divide potatoes between 4 serving bowls; top with chicken and vegetable mixture. If desired, top with crispy onions.
