    1 c. cornmeal (preferably whole-grain)
    ¾ c. flour (may be all or part whole wheat)
    ¼ c. soy flour
    1 tbsp. baking powder
    2 egg whites
    1 c. soymilk
    1 c. creamed corn
    1 tbsp. soy oil

    Directions

    1. Preheat oven to 400 degrees. Lightly grease 9-inch pie plate.
    2. In medium mixing bowl, combine cornmeal, flour, soy flour and baking powder.
    3. In another bowl, whisk together egg whites, soymilk, creamed corn and soy oil. Add this mixture to the dry ingredients, stirring just to blend.
    4. Pour batter in pie plate. Bake at 400 degrees for about 25 minutes, until center tests done. If bread is browning too quickly, cover loosely with foil.
    5. Cut into 8 wedges to serve.
