2 c. yellow cornmeal
2 tbsp. potato starch
2 tbsp. white sugar
1 ½ tsp. gluten-free baking powder
2 eggs, separated
1 tsp. xanthan gum
1 tsp. salt
1 c. milk
½ tsp. baking soda
½ c. corn oil

Directions

  1. Grease an 8-by-8-by-2-inch baking pan.
  2. In a medium bowl, stir together cornmeal, potato starch, white sugar and baking powder.
  3. Separate eggs. Beat egg yolks in 1 bowl. In a second bowl, beat egg whites with clean beaters until stiff.
  4. In a small bowl, combine xanthan gum, salt, milk, baking soda and corn oil.
  5. Add egg yolks and milk mixture to cornmeal mixture, just until moistened.
  6. Fold in beaten egg whites.
  7. Turn mixture into greased pan.
  8. Bake at 400 degrees for 20 to 25 minutes.
