Preheat oven to 350 degrees. Place a wire rack in a large rimmed baking pan. Spray rack with nonstick spray; set aside. Pat chicken dry with paper towels.
Use Doritos Cool Ranch-flavored tortilla chips to give a crunchy crust to chicken fingers.

|3 c. Doritos Cool Ranch tortilla chips|
|⅓ c. Hy-Vee all-purpose flour|
|¼ tsp. Hy-Vee salt|
|2 Hy-Vee large eggs, beaten|
|½ c. Culinary Tours Sriracha ranch dressing, for dipping|
|Hy-Vee paprika, for garnish|

- 3 shallow bowls
Place chips in a food processor. Cover and pulse until finely crushed.
Combine Flour and salt in a shallow bowl. Place eggs in another shallow bowl and crush Doritos chips in a third shallow bowl.
Dip chicken, one piece at a time, into flour, shaking off excess. Dip into eggs, then evenly coat with crumb mixture. Place chicken on prepared rack in pan.
Bake for 10 to 15 minutes or until done (165 degrees). Place ranch dressing in serving dish; garnish with paprika, if desired. Serve with chicken for dipping.
