    ¾ c. Hy-Vee all-purpose flour
    ¼ c. chocolate sandwich cookies, ground
    1 tsp. Hy-Vee baking powder
    ½ c. Coffee-mate cookies and cream flavor liquid coffee creamer
    1 large egg
    3 tbsp. Hy-Vee unsalted butter, melted

    Directions

    1. Preheat oven to 350 degrees. Grease a 24-cup mini muffin pan; set aside.

    2. Combine flour, ground cookies, and baking powder in a large bowl; stir to combine. 

    3. In a small bowl, whisk together Coffee-mate cookies and cream creamer, egg, and butter. Add to flour mixture and mix until completely combined. Spoon batter evenly into prepared muffin cups. 

    4. Bake 8 to 10 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan and dust with powdered sugar, if desired.
