    1 lbs. frozen Hy-Vee cooked, tail-on, peeled and deveined shrimp
    2 c. chopped pineapple
    1 c. chopped red bell pepper
    ¼ c. Hy-Vee sweetened coconut flakes
    ⅓ c. light coconut milk
    2 tbsp. sweet red chili sauce
    ¼ tsp. Hy-Vee salt
    Hot cooked rice, optional

    Directions

    1. Thaw shrimp according to package directions.
    2. Meanwhile, cook pineapple and bell pepper over medium-high heat in a large skillet for 3-4 minutes, stirring occasionally. Drain and then add in shrimp, coconut flakes, coconut milk, chili sauce and salt. Cook for 4 to 5 minutes or until heated thoroughly, stirring occasionally.
    3. If desired, serve over rice.
