    12 Hy-Vee Bakery chocolate chip cookies with Ghirardelli chocolate
    3 c. It’s Your Churn vanilla bean premium ice cream, slightly softened

    • Parchment paper
    • Plate or shallow dish
    • Ice cream scoop
    • Small microwave-safe bowl

    Directions

    1. Line a rimmed baking pan with parchment paper; set aside. Place mini chocolate chips onto a plate; set aside.

    2. To assemble ice cream sandwiches, place 6 cookies upside down on a clean work surface. Place ½ cup scoop of ice cream in the center of each cookie. Top each ice cream scoop with remaining cookies; press slightly to push ice cream to the edges.

    3. Roll the side of each ice cream sandwich in mini chocolate chips, pressing slightly so the chips adhere to the ice cream. Place ice cream sandwiches in prepared baking pan; freeze at least 20 minutes before serving.

    4. Berries-and-Cream CCC Ice Cream Sandwiches: Coarsely chop 1 (4-oz.) pkg. Ghirardelli white chocolate premium baking bar; place in a small microwave-safe bowl. Microwave on HIGH at 30-second intervals or until melted, stirring each time. Assemble ice cream sandwiches as directed, using 12 Hy-Vee Bakery chocolate chip cookies with Ghirardelli chocolate and 3 cups It’s Your Churn strawberries & cream premium cream, slightly softened. Drizzle with melted white chocolate. Freeze in prepared baking pan at least 20 minutes before serving.

    5. Mocha Latte CCC Ice Cream Sandwiches: Place ½ cup Over the Top chocolate sprinkles in a shallow dish; set aside. Coarsely chop 1 (4-oz.) pkg. Ghirardelli semi-sweet chocolate premium baking bar; place in a small microwave-safe bowl. Microwave on HIGH at 30-second intervals or until melted, stirring each time. Dip the bottom sides of 6 Hy-Vee Bakery chocolate chip cookies with Ghirardelli chocolate into the melted chocolate; allow excess to drip off. Then dip chocolate-dipped sides into chocolate sprinkles. Place cookies, chocolate sprinkle sides up, in prepared baking pan; refrigerate for 2 minutes or until chocolate is set. Assemble ice cream sandwiches, using an additional 6 chocolate chip cookies for tops and 3 cups It’s Your Churn java chunk premium cream, slightly softened. Freeze at least 20 minutes before serving.
