Directions
For sauce, in a small bowl whisk together mustard, cilantro (if desired), garlic, orange peel and juice; set aside.
Heat a large skillet over medium-high heat. Add butter; swirl to coat pan. Add fillets, skin side up; cook 1 to 2 minutes per side or until golden.
Sprinkle fillets with almonds. Pour sauce around fish; cook 2 minutes or until sauce is slightly reduced and fish flakes easily with a fork. Serve fillets with orange slices (if desired) and top with sauce and almonds.
