Cinnamon-Glazed Carrots

1 (16 oz) package Hy-Vee baby carrots | ||
2 tbsp. water | ||
½ tbsp. cornstarch | ||
¼ tsp. Hy-Vee ground cinnamon | ||
½ c. apple juice | ||
2 tbsp. Hy-Vee honey | ||
1 tsp. Hy-Vee margarine |
Directions
- In a 1-1/2 quart glass casserole dish with lid, combine carrots and water. Cover and microwave on HIGH for 3 minutes. With lid securely in place, shake dish to rearrange carrots. Continue cooking for 3 minutes longer. Let stand covered 6 minutes.
- Meanwhile, in a 2-cup glass measuring cup, stir together cornstarch and cinnamon.
- Gradually stir in apple juice.
- Add honey and margarine. Microwave on HIGH for 1 minute. Stir. Cook another 30 seconds.
- Drain carrots and stir in cinnamon glaze. Serve immediately.
