    3 tbsp.minced parsley
    Juice of 1 lemon
    2 tsp.coarse ground Hy-Vee black pepper
    1 tsp.kosher salt
    8 slice(s)Hy-Vee bread, toasted
    1 c.baby spinach
    ½ c.sliced yellow cherry tomatoes
    1(16 oz) pkg SeaBest cooked shrimp, thawed
    Lemon wedge, optional

    Directions

    1. In a small bowl, combine yogurt, parsley, lemon juice, black pepper and salt. Spread yogurt sauce on one side of each bread slice. Top with baby spinach, sliced yellow tomatoes and shrimp. Serve with lemon wedge, if desired.
