|10 oz. Somerdale white Stilton cheese with apricots|
|Hy-Vee red raspberry preserves, for serving|

Cut cheese into 1-inch cubes. Dip each cheese cube diagonally into melted chocolate, covering about half of the cube. Place on parchment paper; let stand until set. Cover and refrigerate until ready to serve. If desired, top with raspberry preserves just before serving.
