    1 c.Hy-Vee flour
    2 tsp.Hy-Vee baking powder
    1 tsp.Hy-Vee sugar
    1 c.Hy-Vee skim milk
    1 tbsp.Hy-Vee canola oil
    1 tsp.Hy-Vee vanilla extract
    Hy-Vee butter, optional
    Hy-Vee pancake syrup, optional

    Directions

    1. Whisk together flour, baking powder and sugar in a large bowl.
    2. Whisk together milk, oil and vanilla in another bowl. Pour into the dry ingredients and stir together until just combined. Let stand a few minutes while the skillet heats.
    3. Heat a large non-stick skillet or griddle over medium heat. If desired, melt a bit of butter in the skillet.
    4. Drop batter by 1/4 cupfuls onto skillet. When bubbles form on the surface and edges look dry, flip and cook until the bottom is golden brown. Keep warm in a 200-degree oven until ready to serve with butter and pancake syrup.
