1 tbsp. olive oil
1 small organic onion, chopped
2 cloves garlic, minced
1 c. uncooked long-grain white rice
1 (16 oz) jar Hy-Vee HealthMarket medium salsa
1 (15.25 oz) can Hy-Vee HealthMarket black beans, drained
1 chipotle pepper in adobo sauce, finely chopped
2 c. water

Directions

  1. Heat oil in a large saucepan over medium heat. Add onion and garlic; saute until onion is very soft, about 10 minutes. Stir in rice and cook, stirring frequently, another 2 minutes.
  2. Add salsa, beans and chipotle pepper. Slowly stir in water. Bring to a boil. Cover and simmer 25 minutes or until all water is absorbed and rice is fluffy.
  3. Fluff with a fork before serving.
