    Serves 4
    ½ c. Hy-Vee butter, divided
    3 tbsp. Hy-Vee minced onion
    1 small green pepper, chopped (about 1/2 cup)
    ¾ c. instant rice, prepared according to package directions
    1 tsp. Hy-Vee parsley flakes
    ½ tsp. sage
    ⅛ tsp. Hy-Vee pepper
    1 (3 lb) broiler chicken


    1. In skillet over medium heat, melt 6 tablespoons butter. Add onion and green pepper; cook until green pepper is tender. Stir in rice, parsley flakes, sage and pepper; set aside.
    2. Remove giblets from chicken; rinse chicken.
    3. Place chicken in baking dish. Stuff chicken with rice mixture; rub remaining 2 tablespoons butter on chicken.
    4. Bake 2 hours. Baste occasionally with additional butter or drippings from pan.
