|½ c.||Hy-Vee butter, divided|
|3 tbsp.||Hy-Vee minced onion|
|1||small green pepper, chopped (about 1/2 cup)|
|¾ c.||instant rice, prepared according to package directions|
|1 tsp.||Hy-Vee parsley flakes|
|⅛ tsp.||Hy-Vee pepper|
|1||(3 lb) broiler chicken|
- In skillet over medium heat, melt 6 tablespoons butter. Add onion and green pepper; cook until green pepper is tender. Stir in rice, parsley flakes, sage and pepper; set aside.
- Remove giblets from chicken; rinse chicken.
- Place chicken in baking dish. Stuff chicken with rice mixture; rub remaining 2 tablespoons butter on chicken.
- Bake 2 hours. Baste occasionally with additional butter or drippings from pan.
