|½ c. Hy-Vee butter, divided|
|3 tbsp. Hy-Vee minced onion|
|1 small green pepper, chopped (about 1/2 cup)|
|¾ c. instant rice, prepared according to package directions|
|1 tsp. Hy-Vee parsley flakes|
|½ tsp. sage|
|⅛ tsp. Hy-Vee pepper|
|1 (3 lb) broiler chicken|
- In skillet over medium heat, melt 6 tablespoons butter. Add onion and green pepper; cook until green pepper is tender. Stir in rice, parsley flakes, sage and pepper; set aside.
- Remove giblets from chicken; rinse chicken.
- Place chicken in baking dish. Stuff chicken with rice mixture; rub remaining 2 tablespoons butter on chicken.
- Bake 2 hours. Baste occasionally with additional butter or drippings from pan.
