½ tsp. minced fresh ginger
¼ tsp. crushed red pepper
1 lbs. Hy-Vee Cool Chicken boneless, skinless chicken breasts, cubed
1 tsp. Hy-Vee Select olive oil
1 c. sliced carrots
1 green bell pepper, coarsely chopped
½ c. sliced green onions

    Directions

    1. To make sauce, combine soy sauce, ginger and crushed red pepper flakes in a small bowl. Set aside.
    2. Heat olive oil in a large skillet over medium-high heat. Cook and stir chicken 5 minutes.
    3. Add carrots, green bell pepper and green onions to skillet. Cook and stir until vegetables are tender, but still crisp, about 2 minutes.
    4. Pour sauce over chicken and vegetables. Cook and stir 4 to 5 minutes, until chicken is cooked through and chicken and vegetables are coated in sauce.
