    ½ c. plus 2 tbsp light mayonnaise
    1 tbsp. Hy-Vee Dijon mustard
    ¼ tsp. Hy-Vee salt
    ¼ tsp. Hy-Vee ground black pepper
    2 chicken breasts from a rotisserie chicken, bones and skin removed, coarsely shredded (about 2-1/2 cups)
    1 c. halved seedless red grapes
    1 Braeburn apple, cored and finely chopped
    2 green onions, green parts thinly sliced
    1 (2 oz) pkg Hy-Vee slivered almonds, toasted*
    1 (5 oz) pkg Hy-Vee spring mix salad greens

    Directions

    1. Combine mayonnaise, mustard, salt and pepper in a large bowl. Fold in chicken, grapes, apple and onions. Cover and chill for 2 hours.
    2. Before serving, fold almonds into chicken salad.
    3. Serve chicken salad on beds of salad greens.
    4. *To toast almonds, toss nuts in a skillet over medium heat until light golden brown.
