Chicken Panini with Lemon-Basil Mayonnaise

1 | rotisserie chicken, shredded | |
1 | (1 lb) loaf Hy-Vee focaccia bread | |
1 | medium tomato, thinly sliced | |
4 slice(s) | Hy-Vee mozzarella cheese |
Directions
- Zest lemon and cut in half. Squeeze 1 tablespoon juice from lemon; discard remaining lemon.
- Combine mayonnaise, basil, lemon zest, lemon juice and garlic, stirring until creamy. Stir in chicken, coating to cover chicken.
- Slice focaccia bread to form sandwich. Layer chicken mixture, tomato and cheese on bottom half. Top with remaining half of focaccia. Cut into 8 sections.
- To heat, place sandwiches in panini press or heated skillet for 2 to 3 minutes or until heated through.
