1 | (14.5 oz) can Hy-Vee Italian stewed tomatoes, undrained | |
½ c. | sliced fresh mushrooms | |
¼ c. | chopped onion | |
¼ tsp. | Hy-Vee black pepper |
Directions
- In a large skillet sprayed with non-stick cooking spray, cook chicken over medium heat for 6 minutes, turning once halfway through cooking time.
- Stir in tomatoes, mushrooms, onion and black pepper. Bring to a boil. Reduce heat and simmer, covered, 15 minutes or until chicken reaches 165 degrees. Remove chicken from skillet; cover chicken to keep warm.
- Simmer tomato mixture, uncovered, about 5 minutes to reach desired consistency. Serve over chicken.
