Chicken Avocado Salad Wraps

1 to 2 boneless, skinless chicken breasts, cooked and chopped | ||
2 avocados | ||
¼ c. green onions, chopped | ||
Juice of 1/2 a lime or 1 tbsp bottled lime juice | ||
3 tbsp. fresh cilantro or basil | ||
Pepper and garlic powder, to taste | ||
Whole wheat tortillas and sliced veggies, for serving |
Directions
- Cook chicken breast until done (grilling the day before works well), let cool in the fridge.
- Chop chicken into small cubes.
- Cut avocados in half, remove pit, scoop flesh into a bowl and mash.
- Mix in chicken, green onions, lime, cilantro and garlic powder.
- Divide mixture into four and spread on whole wheat tortillas. Add sliced veggies of your choice and roll up into a wrap.
