½ c. Hy-Vee butter, at room temperature | ||
5 oz. soft tofu | ||
1 tsp. lemon extract | ||
2 ½ c. Hy-Vee all-purpose flour | ||
1 tsp. Hy-Vee baking soda | ||
½ tsp. cream of tartar |
Directions
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream the sugar and butter until fluffy.
- Add the tofu and lemon extract; beat well.
- In a separate bowl, sift together flour, baking soda, and cream of tartar. Add to tofu mixture in four parts, mixing well after each addition.
- Drop dough by heaping teaspoonfuls onto a nonstick cookie sheet. Bake about 10-11 minutes or until edges start to turn golden brown.
