3 oz. Hy-Vee cream cheese
3 tbsp. Hy-Vee butter
2 c. Hy-Vee baking mix
¾ c. plus 2 tbsp Hy-Vee skim milk, divided
½ c. Hy-Vee cherry preserves
1 c. Hy-Vee powdered sugar
1 tsp. Hy-Vee vanilla

Directions

  1. Preheat oven to 425 degrees. Spray an 8-by-8-inch baking pan with nonstick cooking spray.
  2. Cut cream cheese and butter into baking mix until crumbly.
  3. Stir in 3/4 cup milk. Press half of the mixture into prepared pan.
  4. Spoon preserves over mixture in pan. Drop remaining batter by teaspoonfuls over top.
  5. Bake 13 to 15 minutes or until a toothpick inserted into center comes out clean.
  6. In a small bowl, combine powdered sugar, vanilla and 1 to 2 tablepsoon milk. Drizzle evenly over top of warm coffeecake before serving.
