Place cherries, sugar, and bourbon in a medium saucepan. Bring to a boil and reduce heat; simmer 15 to 20 minutes or until cherries have softened and jam begins to thicken. Remove from heat; cool slightly.

In a food processor or blender, process mixture until nearly smooth. Transfer to a jar or airtight container and refrigerate for up to 2 months. If desired, serve over Kelley's Chocolate Cheese Fudge and pretzel crackers.
