¾ c. sesame oil
1 tbsp. fresh grated ginger
1 clove(s) garlic, minced
1 to 2 tsp wasabi paste
2 tbsp. soy sauce
1 (12 oz) pkg edamame, cooked and cooled
6 crimini mushrooms, sliced, cooked and cooled
1 red bell pepper, roasted, seeded and chopped
2 green onions, chopped on the bias
4 stalks bok choy, chopped
2 tbsp. chopped fresh cilantro

Directions

  1. In a large bowl mix sesame oil, ginger and garlic. Blend in wasabi paste (adding as much wasabi as you prefer); continue whisking and slowly add soy sauce.
  2. Add edamame, mushrooms, pepper, onion, bok choy and cilantro to the dressing. Season to taste.
