Chef Craig's Edamame Salad
Servings and Ingredients
|¾ c. sesame oil|
|1 tbsp. fresh grated ginger|
|1 clove(s) garlic, minced|
|1 to 2 tsp wasabi paste|
|2 tbsp. soy sauce|
|1 (12 oz) pkg edamame, cooked and cooled|
|6 crimini mushrooms, sliced, cooked and cooled|
|1 red bell pepper, roasted, seeded and chopped|
|2 green onions, chopped on the bias|
|4 stalks bok choy, chopped|
|2 tbsp. chopped fresh cilantro|
- In a large bowl mix sesame oil, ginger and garlic. Blend in wasabi paste (adding as much wasabi as you prefer); continue whisking and slowly add soy sauce.
- Add edamame, mushrooms, pepper, onion, bok choy and cilantro to the dressing. Season to taste.
