    1 c. Bisquick
    2 c. Hy-Vee skim milk
    4 Hy-Vee large eggs
    ¼ tsp. Hy-Vee black pepper
    1 lbs. Hy-Vee bacon, cooked and crumbled
    6 c. Hy-Vee frozen potato puffs
    1 c. Hy-Vee shredded cheddar cheese
    1 tbsp. sliced green onions

    Directions

    1. Preheat oven to 400 degrees. Coat a 9-by-13-inch baking dish with nonstick cooking spray.
    2. In a bowl, stir together Bisquick, milk, eggs and black pepper until thoroughly mixed. Pour mixture into baking dish and sprinkle with half the cooked bacon. Place potato puffs on a cookie sheet.
    3. Bake both the egg mixture and potato puffs for 20 minutes. Remove both from oven.
    4. Place potato puffs on top of egg mixture in baking dish; sprinkle with cheese and remaining bacon. Return casserole to the oven and bake for 15 minutes or until cheese melts. Remove casserole from oven and sprinkle with green onions.
