Unfold thawed puff pastry sheets; cut each into 9 squares. Press a dough square in each prepared muffin cup. Spoon 2 teaspoons pizza sauce into each pastry cup; top with 1/4 teaspoon Parmesan cheese. Add 4 pepperoni slices and 2 Midwest cheese cubes to each cup.
Bake for 13 to 15 minutes or until cheese is melted and pastry is golden brown. Garnish with additional Hy-Vee grated Parmesan cheese and fresh parsley, if desired. Cool for 5 minutes before serving.
